Alinea Alum Brings Culinary Excellence to Thousand Oaks

Chef John Vega, renowned for his tenure at the three-Michelin-starred Alinea in Chicago and his training at the Culinary Institute of America (CIA) in Napa, is set to make a mark in Thousand Oaks.

He’s opening his new venture, Selvin’s, on Friday, June 21. The restaurant, nestled in the Palm Garden Hotel, is named after Harry Selvin, who has owned the hotel since 2012.

Vega’s culinary expertise is evident in the thoughtfully curated menu that balances modernist flair with approachable California coastal cuisine. Diners can expect a diverse array of dishes, from the intriguing to the comforting.

Starters like truffle fries and corn agnolotti pave the way for heartier mains such as pizzas and seared halibut. For those craving a hint of molecular gastronomy, the menu features items like mango powder with hamachi crudo and Parmesan truffle foam accompanying the seared scallop risotto.

Selvin’s promises a dining experience that’s both sophisticated and inviting, thanks to its dimly lit dining room with wood floors and minimalist furniture.

The restaurant, located at 495 N. Ventu Park Road, Thousand Oaks, CA 91320, will operate Monday through Thursday from 4 p.m. to 10 p.m., Friday and Saturday from 4 p.m. to midnight, and Sunday from 4 p.m. to 9 p.m.

On Saturday, June 29, the Japanese American Cultural & Community Center will host the first-ever Nikkei Wine Summit: American Wine with Japanese Soul.

This event, running from 12:30 p.m. to 7:30 p.m., celebrates the rich legacy of the Nikkei community in California’s wine industry. Attendees will have the unique opportunity to taste wines from over 15 leading Japanese and Nikkei wineries. Tickets are available for $150 per person.
